Carrot Kheer Recipe

It is a delicious and easy sweet dessert you can make for any occasion.

INGREDIENTS

  • Carrots                                                            2(medium size)
  • Ghee                                                               2 tbsp
  • Milk                                                                 2 cups
  • Condensed milk                                              2-3 tbsp
  • Cashew nuts                                                   5-6 broken
  • Raisins                                                            8-10
  • Sugar                                                               1-2 tbsp or as needed
  • Cardamom pd                                                  1/4 tsp
  • Saffron                                                              a pinch(optional)

METHOD

Peel and grate the carrots. Heat 2 tbsp ghee in a heavy bottomed pan and shallow fry the cashewnuts and raisins.Transfer to a plate and keep aside. In the same pan saute the carrots over low flame for 5-6 min. stirring continuously until it shrinks and the raw smell leaves. Add 1 cup milk ,mix well and cook for 5 min. on medium flame. Cool down for a while and blend half of the carrot mixture in a blender.Return the ground paste to the pan.Dissolve the saffron in 1 tbsp of  warm milk and add to the mixture, also add sugar( according to taste) ,condensed milk, the remaining milk and the cardamom pd. Mix well and simmer for 5-8 min. and when it gets thick switch off the flame. Garnish with fried cashewnuts and raisins and serve warm or chilled.
